I had a great experience in Cambodia with Mr. Yun on a 2 and 1/2 day itinerary. He speaks good English, has exceptional technical knowledge of the temple sites, and is very attentive to the needs of an American traveller. For example, he kept cases of bottled water in the car, he stopped at restaurants that were clean (one place even sterilized the flatware), and he put together a combination of temples that was a very nice mix of the various styles.

I have two suggestions for anyone doing this - definitely do the trip to Kbal Spean (river of 1000 lingas). The hike and waterfall at the end alone are worth the trip, not to mention the numerous carvings. My second suggestion is to skip the boat ride at Tonle Sap. I did it at the suggestion of another traveller at the hotel. The boat ride is government run I think, overpriced, and you'll see the same stuff for less doing the Mekong Delta tour in Vietnam with the Sinh Tourist or similar company.
